Lentils and Rice a la Jen Pederson

1/2 cup brown rice
3/4 cup brown lentils
1 onion chopped finely
1/2t. basil
1/2t. oregano
1/2t. thyme
1/4t. garlic powder
3 c. vegetable or chicken broth

Put all ingredients into a glass covered, oven proof dish and mix. Cover with lid and put into a 300 degree oven for 1 1/2 hours. Uncover and sprinkle cheese on top. Put back in the oven for a few minutes until the cheese melts.

We make this all the time. The kids love it with sour cream, salsa and scoop it with chips. My friend's family puts balsamic vinegar on the plate and then dish this food ontop and love it--personally, hahven't tried that version. Love the chips one, tho!

Jen sent me this recipe when we were (were?) going through a difficult financial period. It's cheap, super easy and still sooo yummy! I think I'll try kacey's ideas, too!
