TACO SALAD

a Smith household favorite...

This is a great way to get your little guys (or big guys) to eat their veggies. I make ground turkey with taco seasoning. In a bowl I start with lettuce which I cut thinly, add all sorts of veggies like corn, green peppers, red peppers, etc... Top that with crushed chips. Then add salsa, sour cream, cheese,and a bit of ranch dressing. Yummy!!!

we just had taco salad last night!! It is a summer favorite in my household. I will have to add the red and green peppers next time and try it with ground turkey-much healthier than gr. beef. I use pinto beans and black beans as well. I suppose you could eliminate the "meat" altogether if you have lots of beans, huh? What do you think?

Do you make your own hummus? I just started doing it. We eat it inside corn tortillas. Soo good!

We LOOOOOVE hummus. I almost always keep a bowl of it on hand. I have been spreading it inside of a tortilla and adding turkey and veggies for a great wrap.
The bean idea is good for the taco salad!! I'll have to do that next time!

I make my own. Its posted on this blog in the February archives. I use plain yogurt instead of tahini. It makes it lighter and we think, yummier.
